Ever since I was a vegan having lunch has been on my top priority since I am a very active person (a dancer). However due to having a busy schedule it has always been my aim to make my lunch convenient.
This is the reason I will be showing you one of my favorite quick vegan lunch that I resort to when I am in a rush for work.
If you are a beginner vegan and you do not have time like me to cook this will be very easy for you to do.
This food I will be showing you here have all the vitamins needed for your lunch as a vegan so this lunch always works.
Let’s start by knowing the tools that you will need to do the quick vegan lunch.

Now that you have your tools let’s look at the recipe that you will be needed to accomplish this task.
- 1000 Islands sauce
- Soya polony
- Brown bread (sliced)
- Apples (1/2)
- 2 cups of spinach
- 2 cups of Pineapple
- 1 banana
- Olive oil spray
- 1 Litter of water
How to make this quick vegan lunch
Take four slices of bread and put sweet chili and then a small amount of 1000 Islands sauce two slices.
Cut soy polony into for slices and put it on the two slices that you have put the sauces on.
Place the dry slices on top of the other half.
On the toaster spray the olive oil sufficiently until toaster is moisturized. Turn on the toaster to get it warm for 1 minute.
Put in your slices of bread in the toast and wait for about 5 minutes or until the sandwiches have turned golden brown in color.
Take out the sandwiches and cut them into half and put it in your lunch box.
Put your greens, apples and peanuts all in your blender and mix for about 1 minute

Now I am guessing you would like to know how much nutrition you will get from this meal.
Do not worry being a fussy vegan eater I am exactly like that and that has made a huge difference in my life.
On this meal you are looking at the following vitamins:
- Protein content
Polony slices=1.2 grams
Bread slices=8 gram
Cashews= 5 grams
Spinach= 1.8 grams
Looking at this meal you will get a protein content of 16 grams which nearly half of the daily recommendation of 44 grams for females and 54 for males.
Not bad for a quick lunch hey…
Bear in mind that you will have to increase the intake especially if you are an athlete or will not have a proper full meal in the faternoon so as the make sure your nutrition especially protein is take care of.
What I do normally if I have had this meal I have a vegan protein bar which I normally take before or after a workout or dance session.
This good thing about such a bar is that it will be equivalent to having a meal due to it having high protein.
If you are worried about your sugar levels or you are diabetes when eating a vegan bar do not worry I have protein bars that have high protein but less sugar content.

Having quick vegan lunch is needed in this modern day of fast technology and busy work life. Most people like me do not have time to sit down and think of making lunch so having lunch that will be easily made is a must for everyone.
I have been vegan for my whole adult life and I can safely say that the foods I eat have given me nutrition and have never lacked with any vitamins since I make sure I eat a balanced diet.
Having brown bread with a vegan polony can be very since and if done well can be very delicious and fully give you all the nutrition you need.
Having a smoothie with this sandwich can be the best thing you do as a vegan since you will not only increase your vitamins but you will be keeping yourself hydrated.
I also like adding a healthy vegan protein bar to give me more energy especially since vegans tend to lack protein in their body.
I however have vegan bars low in sugar and high in protein to keep it as healthy as possible.
